Red Velvet Cake

(grease 2, 9 inch pans) baking time 350 for 30 minutes

2 cups all purpose flour

1tsp baking powder

1 1/2 tsp salt

1 tsp cocoa

3/4 cup oil

1 1/2 cups sugar

1 one ounce red bottle food coloring

2 eggs

1 cup buttermilk

1 tsp baking soda

1 tsp vinegar

1 tsp vanilla

3/4 cup milk

1/2 sugar

sift baking powder , flour, salt and cocoa. cream oil, 1 1/2 cups sugar, add eggs one at a time. beat well after each. add food coloring, blend well, combine buttermilk and baking soda. mix well, add to mixture alternating with dry ingredients, add vanilla , vinegar, combine milk and add remaining sugar in a sauce pan, bring to a boil, spoon evenly on each layer, cool and frost

color rest of coconut and put on top

1 pound confectioners sugar

1 cup coconut

4 - 5 drips red food coloring

Frosting

1 8ounce cream cheese

1/2 cup margarine

1 tsp vanilla

combine cream cheese, margarine and vanilla, beat well until smooth, gradually adding sugar, add 3/4 cup coconut.

Chocolate Gobs - Alberta Mancini Recipes

Chocolate Gobs

2 cups sugar

1/2 cup spry or oleo

2 eggs

3/4 cup boiling water

1 cup buttermilk

4 cups flour

3 teaspoons baking soda

1/2 teaspoon baking powder

1/2 cup cocoa

Drop by spoonfuls on ungreased cookie sheet

Bake at 450 degrees for five minutes

Filling for Gobs

1 cup milk and 5 tablespoons flour

cook until thick and dry. let cool

cream together

1 cup powdered sugar

1 cup spry or oleo

1/2 cup oleo then add flour mixture and beat until smooth and fluffy.

fill cookies and roll in powdered sugar.

2 tablespoons cocoa (mix into paste)

1 cup buttermilk

2 cups cake flour

1/2 teaspoon salt

1 teaspoon vanilla

1/2 teaspoon baking powder (sift dry ingredients together)

1 tablespoon vinegar

1 teaspoon baking soda (mix and fold into mixture)

Bake in 2 layers 8 or 9 inch pans

30 to 35 minutes in 350 degree oven

use favorite frosting

Wales Coal Miners........................

List,I just found out that my family, Morris, migrated from Wales to South Western Pennsylvania, setttled into Tyrone Township, Fayette County, PA and worked the coal mines here. I have been doing family history for a long time. This is one brick wall I can't break down. I want to find the Wales connection.My great, great, great grandfather's name was Samuel Morris. This is the earliest I've been able to search. Can anyone suggest books on coal miners names or photos that would have migrated into this area from Wales? My great, great grandfather Humphrey appeared as a son of Samuel Morris in 1850 PA census.Any help would be greatly appreciated.Thank you so much,Janet L. Mancini
