How are your pets in this warm weather? They look very contented in your photos. My cats used to doze a lot in the heat.
I promised that Pineapple Recipe and here it is:
Baked or grilled Pineapple: A ripe pineapple, peeled and cored and cut into 2 halves, white grape juice, 250 g demerara sugar, 2 tbsp golden syrup, a few wineglasses of rum, 1 lemon, 1 lime or 2 oranges if you prefer, 1 small coconut, a pinch of salt, a few raisins.
Method: cut the pineapple in half and put on a baking tray. Squeeze the lemon and lime juice into a bowl then add enough grape juice to come half way up the sides of the pineapple halves.
Bake in a fairly hot oven for 10 minutes, turn the pieces and then bake another 10 minutes again.
Whilst the pineapple bakes, crack the coconut and use a coarse grater to get large flakes.
Next, pour the sugar, syrup, pinch of salt and coconut milk into a pan and heat until the liquid boils, then bring to a simmer until it caramelises.
While it is still runny, pour in a few wine glasses of rum (2 are usually enough to get a good 'kick' of alcohol).
Place the pineapple halves onto a hot plate, put the coconut flakes and raisins on top and pour the sauce over. Serve with ice cream or cream.
I had a pineapple this weekend which was under ripe. It's not easy to tell, sometimes. It was fairly tasteless but when baked, it was fine.
with melted butter. Grill or fry for about 5 minutes, turning the slices so that they don't burn. (Butter burns easily).
Gillian Morgan said… Hi Meg, I'm pushed for time at the moment, have to go to see to my grandsons. I'm taking them roast butternut squash, tomatoes, mushrooms, steak for Ollie and cauliflower cheese for Harry.

Corgis are from Pembrokeshire, originally.
I followed an artist called Tasha Tudor for years and she had corgis. She was featured in 'Victoria' magazine now and then.
We had five cats at one time (my younger daughter used to find strays).
I love animals but we couldn't go on holiday when we had them because we didn't want them pining.
My grandson, Ollie, is just back from Greece- he ate Baclava.

I can see by your profile you have many interests from poetry to the history of you past in Wales & Scottland. The Celtic countries are a great sorce of inspiration. I am an artist & illustrator and this year I compleated my exhibition the Life & Times of Dylan Thomas, paintings from his youth to his sad death. I have some of the artwork on display on americymru. I hope this is an inspiration to you.
